General Description: Situated at 2000m in the Nyabihu district these are the highest altitude coffee beans in Rwanda. They’re processed at the Shyria cooperative washing station, a hub that’s laser-focused on achieving optimal results for micro-batch producers.
In addition to overnight immersive to depulp, the beans are stomped on by cooperative workers, which helps to enhance their sweetness and provides a profile distinct from most other Rwandan coffee. Beans are then graded, from A1 to A4, using serpentine channels based on density and size, and then dried for between 20 and 25 days on raised beds.
This coffee is as soothing and mellow, with a soft fragrance of magnolia, golden kiwi lychee fruit notes, and a honey sweet finish. A truly great morning coffee!
