General Description: Located in Mexico, Veracruz, the warm, moist climate in Ixhuatlan del Café creates distinctive fruit flavors in its coffee. Beans are first washed and dried; then anaerobic fermentation used for 72 hours to allow full flavor development. The beans are then fan-dried on raised shelves for a little over 3 weeks.
