概述:
「一品咖啡莊園」位於嘉義縣中埔鄉境的『凍仔頂山』阿里山脈上,海拔高度達1180公尺。午後咖啡園年年被雲霧所籠罩,平均日照時間較短,日夜溫差大,正是得天獨厚的氣候變化,讓咖啡果實緩慢成熟,培育出濃郁的咖啡甜感和高密度,風味更加醇香豐富。莊園致力於保護自然生態環境,在田間管理階段採用友善耕作,並努力維護莊園中動植物的多樣性。常有藍腹鷴、台灣獼猴和山羌來拜訪咖啡叢林。
在收成漿果階段,全園採用手工挑選,只選擇完全成熟的漿果進行後續處理。在咖啡的後續處理過程中,全程以低溫控制甜度和pH值的變化。精品咖啡散發迷人的豐富層次。
水洗豆: 在咖啡櫻桃採摘後,採用山泉水進行浮選、去皮後,利用低溫厭氧乾式堆疊水洗法進行發酵,待發酵完成後,再用山泉水將果膠清洗乾淨。風味上較乾淨鮮明且酸質較為明亮,口感較為清爽平衡。
蜜處理: 莊園主人極度堅持「在欉紅」的農產採收原則,只採摘全熟漿果,先以山泉水浮選,並進行低溫厭氧48小時發酵,再控管發酵變因後,以高棚架或機器乾燥,咖啡品質極佳。
日曬豆: 是採用帶皮咖啡櫻桃進行發酵處理,先採用低溫厭氧發酵後,再進行低溫有氧發酵,並帶著果皮進行乾燥,有了果皮的保護,能夠讓整個咖啡櫻桃的果肉與果膠風味進入豆子裡,此做法能夠製作出果香、風味飽滿、甜感濃郁且咖啡醇厚度高的日曬豆。
「一品咖啡莊園」的日曬咖啡豆曾獲得2021阿里山莊園咖啡精英交流賽的金質獎;蜜處理榮獲2022年的金質獎和2021年的銀質獎。

General Description: Yi Pin Estate is located on Dongziding Mountain, in the Alishan Region of Taiwan. Its high altitude, large temperature difference between day and night, and shade trees insure that coffee grows slowly.
Washed: After the coffee cherries are picked, the washed beans are flotation and peeled with mountain spring water, and then fermented by the low-temperature anaerobic dry stack washing method. After the fermentation is completed, the pectin is cleaned with mountain spring water.
Honey: After flotation with mountain spring water the beans receive 48 hours of low-temperature anaerobic fermentation followed by 3–5 months of of storage in a temperature-controlled environment to achieve maximum smoothness.
Sun-dried beans are fermented with coffee cherries skins intact. After low-temperature aerobic fermentation is carried out, and the whole coffee cherry, including the peel is dried. With the protection of the peel, the pulp and fruit of the whole coffee cherry and it’s pectin flavor enters the beans. This method produces sun-dried beans with fruity aroma, full flavor, rich sweetness and high coffee richness.
