Continuing our series of articles on New York Indie Cafes, a 10 minute walk from Variety Cafe Roasters brings us to Cafe Devoción,located in New York’s “Flatiron District”.
Like Variety Coffee and quite a few other artisan cafes, Cafe Devoción began operations in Brooklyn. It offers carefully sourced Colombian coffee served in a classic, brick-lined space with leather sofas.
Important for New York cafes, Cafe Devoción was able to find a space with many unique legacy details, including the original skylight, and exposed brick and pipes, and hardwood flooring. A circular, hanging “garden in the sky” forms the design focal point.
What makes Cafe Devoción unique is that it not only selects and processes its own coffee in Colombia, it also focuses on getting the beans directly from its processing plant to its Brooklyn-based roasting facility within 10 days and then in your cup just a few days thereafter. Roasters that don’t have facilities in coffee growing regions can’t compete with Cafe Devoción on the issue of freshness and, as you’d expect, you can taste it in the coffee.
